Introduction

Indulge in the rich, nutty, and buttery flavors of this Gloucester-style vegan cheese! Made with a base of creamy cashews and infused with bright flavors from the scallions and chives, this unique vegan version of the traditional English cheese is going to wow everyone. Fantastic sliced up in a sandwich with English mustard, pickle and tomato. Or go really wild and add a thin swipe of Marmite!

Ingredients

  • 1 cup raw cashews

  • 3/4 cup water

  • 3 tablespoons nutritional yeast

  • 1 tablespoon vegan butter, melted

  • 2 tablespoons malt vinegar

  • 1/2 teaspoon Dijon or English mustard

  • 1 tablespoon white miso paste

  • 2 medium or 3 small cocktail onions

  • 1/4 cup cornstarch

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon turmeric

  • 1/2 teaspoon salt

  • 1/4 cup chopped scallions

  • 2 tablespoons chopped chives

Instructions

  1. Soak the cashews in water for at least 4 hours or overnight. Drain and rinse them before using. Alternatively, quick-soften them by boiling in water for 10 minutes, then drain and rinse.

  2. In a high-speed blender or food processor, combine the cashews, water, nutritional yeast, vegan butter, malt vinegar, mustard, white miso paste, cornstarch, onion powder, garlic powder, turmeric, and salt.

  3. Blend the mixture until smooth and creamy, scraping down the sides as needed.

  4. Transfer the mixture to a saucepan and heat over medium heat, stirring constantly, until very thick, about 5 minutes. Turn off heat and fold in chopped scallions and chives.

  5. Transfer the thick cheese mixture into an oiled min loaf pan or glass pan. Press into the pan with a spatula to help shape the cheese.

  6. Cool the cheese on the counter for 30 minutes, then place the cheese in the refrigerator for at least an hour to finish firming (or the freezer for 30 minutes, but don't forget it!).

  7. Once firm, remove the cheese from the container and slice for serving!
