Introduction
Looking for a super easy, delicious and healthy vegan cheese? Look no further! In this recipe, we'll show you how to make a mouthwatering vegan cheese using almond flour. We'll infuse it with the delightful flavors of dill and a secret ingredient (hint: it's dill pickle brine!) giving it a Havarti-style twist. Equally delicious on a sandwich as it is when paired with apple on a cheese plate!
Ingredients
1/2 cup almond flour
1 teaspoon nutritional yeast
1 tablespoon brine from a dill pickle jar
1 tablespoon apple cider vinegar
1 tablespoon raw onion, chopped
1/2 teaspoon garlic powder
1 teaspoon salt
1 teaspoon dried dill (or 2 tablespoons fresh dill, chopped)
4 tablespoons cornstarch
1 cup water
Instructions
In a blender, combine all ingredients except for the dill. Blend well until all the ingredients are evenly distributed and the mixture is smooth
Pour the mixture into a saucepan. Bring the mixture to a boil, stirring constantly. Reduce the heat and keep stirring until the cheese becomes very thick and stretchy.
Remove from the heat and add the dried or fresh dill. Stir until combined.
Transfer the mixture to a greased loaf pan or cheese mold. Smooth the top with a spatula.
Allow the cheese to cool at room temperature for about 30 minutes. Then, refrigerate for at least 2 hours, or until firm and set. If in a hurry, place cheese in the freezer for 30 minutes (be sure not to forget it!).
Once the cheese is firm, remove it from the mold and slice it into desired shapes.
Your vegan almond flour cheese is now ready to be enjoyed! Serve it on a cheese platter, use it in sandwiches, or melt it on top of your favorite dishes.
