Vegan Candied Lemon White Stilton

Introduction

Get ready to wow your guests with this creamy, delicious Vegan Candied Lemon White Stilton. With its perfect balance of sweet and tart flavors, this cashew-based cheese is reminiscent of a luscious lemon cheesecake. Bursting with juicy lemon flavor, It's the ideal addition to any cheese plate and perfect with crackers and fruit, especially when you want to impress your guests with a unique and delightful dessert cheese.

Ingredients

  • 1 cup cashews, soaked overnight, rinsed and drained

  • 3/4 cup water

  • 2 tablespoons refined coconut oil, melted

  • 1 tablespoon nutritional yeast

  • 1 tablespoon white wine vinegar

  • 1 tablespoon lemon juice

  • 1/4 cup raw white or yellow onion, or 4 medium jarred cocktail onions

  • 1 tablespoon tapioca starch

  • 1/2 teaspoon Dijon mustard

  • 1/8 teaspoon white pepper

  • 1 teaspoon salt

  • 1/3 cup water (for boiling the agar agar)

  • 1-1/2 tablespoons agar agar powder (not flakes)

  • 1/4 cup candied lemon (see notes for instructions)

Instructions

1. In a blender, combine the soaked cashews, 3/4 cup water, coconut oil, nutritional yeast, vinegar, lemon juice, onion, tapioca starch, Dijon mustard, white pepper and salt. Blend until smooth and creamy. n a small saucepan, bring the water to a boil. Gradually whisk in the agar agar powder until it is completely dissolved. Set aside to cool.

2. In a small saucepan, add 1/3 cup water and agar agar powder, stirring until dissolved and leaving for one minute. Bring to medium heat, stirring continuously for 6 minutes until agar agar has turned thick and glossy. Pour immediately into the blender along with the cashew mixture and blend for one minute on high speed.

3. Pour this mixture into a saucepan and heat over medium heat, stirring continuously, for 5 minutes to activate the tapioca starch.

4. Once the mixture is thick and stretchy, remove from heat and stir in the candied lemon.

5. Pour the cheese into a cheese mold or oiled container. Allow to set for at least an hour in the fridge, or 30 minutes in the freezer (don't forget it!)

6. Once the cheese has set, remove it from the mold and transfer the cheese to a serving plate. Garnish the cheese with additional candied lemon zest or fresh lemon for a burst of flavor and visual appeal, if desired.

8. Serve with your favorite crackers, fresh fruit, or crusty bread. Enjoy!

Notes: To make candied lemon, combine 2 lemons sliced into 1/8" thick slices in a small saucepan along with 1/2 cup sugar, 1/2 cup water and 1 tablespoon lemon juice. Let simmer over medium-low heat, uncovered, for 15 minutes, gently flipping once. Remove slices to a cooling rack to dry briefly before chopping into small pieces and using in this vegan cheese recipe.
